Wiwitz is a 0.9 hectare micro lot in Aldea Xayomlaj, Huehuetenango, Guatemala, farmed by Manuela Salucio and her husband Trinidad Rodríguez Pérez at 1845 masl. The land was bought and planted with Caturra over three years of savings, funded in part by their son Trinidad's work abroad. 

The washed process coffee is depulped on site in order to use cherry pulp as compost. fermented in plastic containers for about 12 hours, washed, rested under clean water another 12 hours, then dried for roughly 5 days with the family hand-turning it 4-5 times a day. Annual production is just 622 kg.
