It is produced by Biniyam Aklilu, who works closely with several small farmers in the area. \u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eCherries are harvested and dried on raised beds, hand-sorted for defects, and covered during the hottest hours of the day to slow the drying process. Once the correct moisture level is reached, the coffee is stored in cherry before being hulled and transported.
